The unique aroma of Ph\u00e9nix beer comes from the hop flowers carefully used in the brewing process. The production line then opens onto a process designed to pulverize the malt into a fine flour, known as &#8220;crushing&#8221;.<\/p>\n<p>Brewing then plays a crucial role, converting the fine flour into sugar through hydrolysis. The resulting wort is then filtered, boiled and enhanced with hops to give it its characteristic tropical island aroma. Visitors are then introduced to the crucial fermentation stage, which lasts around a week, followed by maturation, a three-week period during which the beer is kept at a constant temperature of zero degrees. Finally, at the end of the bottling, packaging and pasteurization stages, comes the exciting moment of tasting.<\/p>\n<p>The brewery offers a full range of beers widely appreciated throughout the country. Other flagship brands include Phoenix, Blue Marlin and Iceberg. Blue Marlin is a high-alcohol, full-flavored blond.
